Grain free, refined sugar free and actual legit shortbread biscuits 

(And for anyone who forgot it’s mothers day this weekend…Your welcome!)

I don’t ALWAYS share my love through food, but most of the time….well….I definitely do! These I actually made for my mum’s birthday last January, along with the healthy shortbread mix in this cute jar. My folks tend to avoid grains but are quite accustomed to that afternoon tea and treat so giving a gift of an easy to make recipe along with the edibles made a good time saving treat 

*To make the Jar; Simply add all the flours, baking soda and salt, close the lid and shake. Decorate as you like the fix a label with cooking instructions (e.g. add 4 tbsp melted butter and maple syrup with 1 tsp vanilla. Mix well to form a dough. Bake a t 160°C for 17-20 mins, let cool) and that’s exactly what you’ll do here…. 

🔸1½ cup almond flour
🔸¼ cup + 1 tablespoon coconut flour
🔸¼ cup + 1 tablespoon tapioca flour
🔸½ teaspoon baking soda
🔸Pinch of salt
🔸4 tablespoons melted grass fed butter (I use KerryGold)
🔸4 tablespoons maple syrup
🔸1 teaspoon vanilla extract


1. Mix all the dry ingredients together before pouring in the wet ingredients.

2. Mix well until fully combined and you can form a ball of dough (This can also be done in the food processor – simply add everything and pulse, again until a dough is formed).

3. Using either a greased and lined tray or a silicone tray (I love the square silicone trays I got a while back from M&S for making both raw snacks and for cooking!) firmly press all the mix down into the pan evenly.

4. Bake in an oven preheated to 160°C for around 17-20 mins until starting to go golden on top. After this you want to leave them to cool for at least 25 mins as they will set a little better. You can eat them warm almost straight away….honestly it’s gorgeous!! BUT it will completely crumble and fall apart so if you want them nicely chopped into presentable pieces, and not look a bit disastrous….then hold fire!

5. If you want to make them extra fancy and special now would be the time for an extra drizzle of dark chocolate! Enjoy
